I ended up splitting a bag of seasoned french fries with Paul. He baked them in the oven while I had pancake issues. Grrr!

I tried using the recipe from the Quick and Easy McDougall cookbook* for applesauce pancakes but I really ought to just make it stick in my head that Mary McDougall's recipes are not always there. It's annoying more than anything else. There are so few vegan cookbooks. So I get the McDougall books hoping... and time and again "Mary Food" just doesn't do it for me.

I just don't like her cooking style. Too Tex-Mex up until the Q&E book. Which is great if you like Tex-Mex but stinks if you don't. I don't! The Q&E book had a better balance, but then I still wonder.

I agree with John McDougall's nutrition ideas because they jive with vegan eating and staying ahead of heart disease but Mary, Mary, Mary... some of these recipes. Ack.

I thought the point of buying all vegan collections was to NOT have to be fussing and adjusting like with other collections. I end up fussing and adjusting a lot with Mary. Sigh. I'll just have to keep collecting.

The pancakes sucked. Blah! I'll have to figure out what the problem is and then write in the correction for the next time I make those pancakes. I know it wasn't me, it had to be that batter recipe. I made another batter recipe thinking I may have screwed up -- also sucked. Totally changed gears, made yet another batter. Sucked. Maybe there was a typo in the book?

Then I ate Paul's fries and then got to work on finding a batter recipe that worked for me so I could compare and then adjust the applesauce ones accordingly.

"It's so funny when you are obsessing," Paul mused.

"I am not obsessing. I am not mad, I am not angry. I am just utterly perplexed. This is supposed to be EASY. It's only pancakes. That's why we wanted breakfast-for-dinner. No hassles. So you tell me why these pancakes are coming out retarded! I swear it is the recipe. I am not stupid, I am not crazy, my ingredients are fresh, the nonstick pan is heated right, my spatula is not broken. What the hell!? I will figure this out... I will know why these pancakes are coming out broken!"

"Obsessed!" he laughed and walked out to the porch.

Anyway, I posted to the McDougall board for suggestions and then went hunting for other pancake batters on-line.

Jackpot! Excerpted from the original...

OJ Pancakes

Ingredients:

  • 1/2 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp sugar (optional)
  • 1 1/2 tsp egg replacer
  • 1 tbsp water
  • 1 cup orange juice
  • 1 tbsp canola oil
  • 1 tbsp applesauce

Directions:

Combine all dry ingredients in one large bowl and all wet ingredients (except Egg Replacer and water) in one small bowl. Mix together Egg Replacer and water separately, and add to "wet" bowl. Mix each combination well. Add wet mix to dry and stir gently. Small lumps will remain. Pour by 1/4 cupful onto a 375 griddle. Cook for a few minutes, then flip and cook for a few minutes on the other side. Top with syrup, powdered sugar or jam and enjoy!

Note: When first poured these will bubble less than regular pancakes, so watch carefully. They are very light and will burn easily if care is not taken.

My Tips:

  • Use calcium-fortified OJ for a calcium boost if you got it
  • Use low-sodium baking powder if you can! Between the baking powder and the baking soda, this shoots the sodium up there -- so those watching sodium intake might pass this one.
  • Pinch of cinnamon might be groovy
  • The egg replacer they usually refer to is Ener-G Egg Replacer, a common brand. Lacto-Ovo people or nonvegetarians can use 2 egg whites. Supposedly you can skip the egg/egg replacer altogether, but I made with with Ener-G.
  • Eyeball it! It's is VERY light and delicate, and will burn easily if you aren't paying attention!

Later on when I have time I will fuss a bit more with it to see if that oil and/or egg replacer is truly needed. Or if I can get away with less baking powder/soda. Or if I can use all whole wheat flour. Fudging and fine tuning.

But it was awesome. The maple syrup over the delicate orange taste was heaven. Mmmmm! Now I have pancakes for tomorrow and to freeze. Yay.

But Mary, Mary, Mary... what is happening to to the applesauce pancakes?!
